Healthy and New

In light of trying something new, I’ve got a couple new recipes I want to try this week. In addition to new recipes, I’m actually trying new to me vegetables. I’ve got asparagus, which my mother tried her hardest to get me to eat when I was young. I thought it looked gross. I also have leeks and cabbage. I’ve never bought any of those things. Ever! But I’m trying to get over myself and my weird perceptions of certain foods here. So we’re trying them.

Monday:

  • breakfast – soaked oatmeal, oranges
  • lunch – grilled cheese, cut veggies
  • snack – veggies and dip
  • dinner – roast chicken (crockpot) asparagus (still haven’t figured out how I want to prepare it) and some kind of rice or potato
  • snack – smoothie

Tuesday:

  • breakfast – omelets, fruit
  • lunch – chicken noodle soup (w/ cabbage and leeks – new!) chicken from previous roast
  • snack – celery and peanut butter
  • dinner – spaghetti w/ brown rice noodles, salad
  • snack – smoothie

Wednesday:

  • breakfast – soaked oatmeal
  • lunch – tuna sandwiches, cut veggies
  • snack – fruit, cheese
  • dinner – beef stew (grass fed beef, potatoes, carrots, onion, peas, corn)
  • snack – homemade popcorn

Thursday:

  • breakfast – GF carrot zucchini muffins, berries
  • lunch – muffin tin lunch (small servings of 2 fruits, 2 veggies, a protein, and a whole grain)
  • snack – granola bar
  • dinner – grilled chicken, corn and millet pilaf (new!)
  • snack – smoothie

Friday:

  • breakfast – french toast with berries
  • lunch – homemade chicken noodle soup
  • snack – fruit, hardboiled egg
  • dinner – tacos with corn tortilla shells

Saturday:

  • breakfast – GF pancakes
  • lunch – sandwiches/soup
  • dinner – homemade pizza, salad
  • smoothies

So wish me luck this week! I’m just hoping I like everything I make so it’s not a waste of money!

    Hey Donielle,

    asparagus is divine if you drizzle it with olive oil and sprinkle salt and pepper on. Just grill in the oven for a little while. They really be yummy. Leeks i use to replace onions coz they’re not a potent, my husband hates onions. Hope that helps! Love the blog!

    My husband and I had asparagus las night.
    He likes to grill or saute it with olive oil, salt and crushed garlic.

    We LOVE asparagus. Roasted with olive oil, sea salt, basil and garlic (with a little lemon) is tasty. Or, check out my coking blog (joyinmykitchen.blogspot.com) for more recipes that use asparagus!

    I just saute til tender with a little butter, lemon juice, sea salt and dill weed. Mushrooms are also great sauted with this combo of ingredients.

    I love asparagus! It was actually one of my favorite vegetables as a kid… I like it either grilled or steamed, both are delicious. You should check out springpad’s weekly meal planner – it’s a great way to organize all of your menus and recipes, I think you’ll really like it!

    Asparagus can be so yummy if you don't overcook. Roast it in the oven at a high temperature (450) with olive oil and salt&pepper for only 5-10 minutes until fork tender. I like to sprinkle it with feta when it comes out too.

    Here is a fantastic leek soup recipe, I recommend topping it with creme fraiche instead of the whipped cream as recommended.

    As for cabbage, coleslaw is always a favorite or boiled cabbage with kielbasa or corned beef.

    i love asparagus, but hated it as a kid! i agree to the grilling it option, we like that best at our house. however in the winter, we saute it with some olive oil and kosher salt. good luck!

    I prepare my asparagus the same way as many others although I just brush with olive oil or butter, top with some italian seasoning and or salt & pepper and then put it under the broiler for a few minutes. It's quick and doesn't get slimy!

    I like to roast asparagus in the oven, coated with OO, salt, and pepper until it is good and done. Then, melt some butter in a pan until it’s sizzling. Remove from heat and whisk in some balsamic vinegar and some soy sauce. Drizzle over asparagus. It’s delicious!

    I totally ditto Vanderbilt Wife for that asparagus recipe. It is awesome! I got it from a Cooking Light magazine years ago. My kids love Potato Leek Soup, which I always try to throw in extra vegetables, and generously topped with cheese. I am always amazed how they eat it up and ask for more! Thanks for the menu tips!
