Baking Day #1 – A Sad End

Today started so fabulously, I was sure I’d get everything and more done today! And I did get a lot done, just a few hiccups along the way. And then my mayo flopped while my granola bars were burning. My 3yo was getting crabby and my baby wanted to nurse for the millionth time. I decided I was done for the day!

So far – here’s what my list for today looks like:

  • Granola Bars, 2 batches – 1 batch DONE, 1 batch BURNED
  • Blueberry spelt muffins, 2 batchesDONE
  • GF zucchini muffins –spent time nursing a baby
  • GF applesauce muffins – spent time nursing a baby
  • cooked ground beef, 2 pounds placed in 1/2 pound amounts in ziplocs DONE
  • cooked taco meat, 2 pounds – Ran out of ziploc bags
  • make crockpot chicken (some for dinner, some for later)DONE
  • make chiliDONE
  • make mexican riceran out of ziploc bags

Tuesday night prep;

  • clean kitchen – Eh, kinda done :-)
  • get chicken broth going in crockpot – DONE. Looks disgusting, smells delicious
  • soak pancake batter – Should be doing right now

I also tried a recipe I planned on doing tomorrow:

  • Homemade Mayo – FAIL, due to my crummy blunder I’m sure, because it was perfect and then flopped. Maybe if I get a chance tomorrow I’ll try and fix it.

Tomorrow I’ve got another decent list of things to don I just need to run to our small town general store first to pick up some ziploc bags at about 10 times the normal price.

  2. Aw, you could borrow some of mine! I’m the tightwad who washes and reuses all her baggies. So my cupboard is literally exploding with them. Not sure they’re all leakproof anymore is the thing… 😛 And don’t worry about not getting it all done. You did amazingly well for having two small children!

  3. You deserve a medal for attempting all of this. I have one child who loves to breast feed and I haven’t thought of baking in months. It does give me some hope that one day it can happen….until then living through other’s achievements is the way to go.

    @FindSavings, Yea, I think she’s definitely hitting a growth spurt too! So she eats all. the. time! :-) The mandatory nursing breaks are great for making me slow down too. I sure can get a lot more done though if I put her in one of my carriers through out the day. She loves the closeness and I get to get things done!

  5. You got tons done! I do this too, where I put far too many things on the list and then don’t feel accomplished.

    Just get an egg yolk in the bowl and whip it really well to get your emulsion going again for the mayo. Then slowly add whatever happened into the bowl, making sure to fully incorporate after every addition, and you’ll be good as new! :)

    @Jes, I did save my ‘mayo’ so maybe I’ll give it another try tomorrow. It just takes so much TIME! Do you think my stand mixer would work?

  6. I’m not sure about the mixer, but it seems like it should. It sounds like you maybe added the oil too fast or didn”t reaerve some of the acid liquid to put in when you were about half way through. Alton Brown did a whole mayo show so maybe there’s some help on foodtv.com. He didn’t do a stand mixer but he did do a food processor, but the ratios were a bit different.
