"Fast" Healthy Dinners

Last night I had the pleasure of meeting Kelly the Kitchen Kop! Hi Kelly! And as we got to talking she mentioned her Real Food Wednesday Carnival that I keep forgetting about. Since I also needed a topic for today, I’m running with it and sharing with you all what we eat over here when time is short. (or the fact that I’m pregnant and have had many a day where I couldn’t stand the smell of food, so everything was quick!) And I pretty much consider quick meals as in less than 10-15 minutes!

Having my freezer and cupboards stocked greatly helps me out when I need to get dinner on the table quickly. A few things I normally have on hand ready to go:

Tacos – I always have a big batch of already mixed taco seasoning (or already ground beef pre seasoned in the freezer), beef or venison, taco shells, and cheddar cheese all in the freezer. I can have it on the table in about 10 minutes!

Steak – What I love about buying beef in bulk (and having venison) is that we always have something to eat. Although we’d rather marinade first, when we need a quicker meal I break out the “foreman” and grill up a couple steaks along with a baked potato, and some steamed broccoli. Takes less than 15 minutes in most cases.

Spaghetti – It’s a super fast meal if you have already cooked ground beef in the freezer! Toss it in a pan with some sauce while the noodles boil and you have dinner in about 10 minutes.

Salad fixings – I always try and keep my fridge full of veggies and salad stuff in case I need a quick meal. I just add in any leftover meat we have too!

When the freezer is bare:
Grilled cheese – So yummy on our homemade wheat bread with some nice sharp white cheddar cheese. Steam some veggies and you’re all set.

Hot sandwiches – I’ll throw some turkey or chicken (normally leftover from roasting but occasionally lunch meat) on some whole wheat bread and toast them in the oven at 350 degrees for 5-10 minutes. Top with lettuce, veggies, mayo, whatever!

Omelets – Super fast to make and you can just toss in whatever veggies you have in the fridge and/or cheese.

Fried egg sandwiches – Again, eggs are super fast and I just serve these on whole wheat toast.

  1. We received a pressure cooker for a x-mas gift from a friend. It’s so fast! we can put frozen chix and potato in it and have dinner in 15 minutes. I have no idea about the health benefits of cooking this way, but it’s super fast!
