Menu Plan : Jan. 26th

Planning out our menus has become a bit more important for me lately. Not only am I falling into the pregnancy fog, my husband is currently on a gluten free diet. So in order to really keep up with everything going on and make sure we’re getting the best possible nutrition, I need to have it written down!
(dinners are normally gluten free since we all eat together, but the breakfasts and lunches posted are for my son and I. Although for dinner, sometimes I toss in a roll or piece of buttered bread for us.)

Monday:
breakfast – veggie and cheese omelet, fruit
snack – cut veggies and dip
lunch – homemade turkey noodle soup
snack – granola bar
dinner – steak, roasted sweet potatoes (roasted at 400 degrees and then brushed with 1:1 ratio of maple syrup and melted butter), steamed broccoli
snack – smoothie (1/2 cup whole fat plain yogurt, 1/2 cup whole milk or juice, frozen banana’s and bluesberries, 1 Tbsp coconut oil)

Tuesday:
breakfast – soaked oatmeal, fruit
snack – celery and peanut butter
lunch – tuna sandwich, small salad
snack – fruit
dinner – grilled chicken, roasted potatoes, corn

Wednesday:
breakfast – fried eggs on whole wheat toast, yogurt
snack – cut veggies and dip
lunch – salad with leftover turkey, whole wheat muffin
snack – fruit
dinner – tacos with homemade shells (I’m going to be trying out some corn tortillas this time!)
snack – homemade caramel corn

Thursday:
breakfast – whole wheat pancakes, fruit
snack – granola bar
lunch – turkey noodle soup
snack – whole wheat muffins
dinner – omelets and homemade sausage, fried potatoes, fruit salad

Friday:
breakfast – scrambled eggs with added frozen spinach, toast
snack – fruit
lunch – salad, grilled cheese
snack – fruit
dinner – breaded and baked tilapia, green bean casserole (for Todd) greens beans for me,
and baked potatoes
snack – smoothie

Saturday:
breakfast – whole wheat pancakes, fruit
snack – veggies and dip
lunch – leftovers
dinner – homemade pizza

Sunday:
breakfast – whole wheat muffins, fruit
lunch – turkey sandwiches, veggies
dinner – beef stew
snack – homemade buttered popcorn
