Menu Plan : March 2

This week I’m planning on cooking a bit more so as to stock up our freezer for when the baby comes. This week in particular I’ll be working on getting some gluten free stuff done for my husband’s lunches. Because really….the last thing I want to do post partum is worry about what to send him to work!

Monday:

  • breakfast – soaked oatmeal, smoothie
  • snack – muffin
  • lunch – sandwiches and cut veggies
  • dinner – roast chicken, mashed potatoes and gravy, steamed veggies

To do: grocery shop, make double batch of sausage/freeze patties

Tuesday:

  • breakfast – scrambled eggs with spinach, fruit
  • snack – granola bar
  • lunch – homemade chicken nuggets (freeze some)
  • dinner – spaghetti and salad

To do: make double batch of granola bars (freeze one)

Wednesday:

  • breakfast – whole wheat toast and green smoothies
  • snack – fruit
  • lunch – leftovers
  • dinner – salmon, roasted potatoes, broccoli

To do: bake double batch of muffins one to freeze, package a few pancake mixes in ziplocs

Thursday:

  • breakfast- soaked steel cut oats, fruit
  • snack – deviled eggs
  • lunch – salad with chicken and shredded cheese
  • dinner – tacos on homemade corn tortillas
  • snack – popcorn

To do: bake bread, get another loaf in dough to freeze

Friday:

  • breakfast – fried egg sandwiches, fruit
  • snack – cut veggies
  • lunch – grilled cheese, cut veggies
  • dinner – chili

To do: double batch of chili to freeze

Saturday:

  • breakfast – pancakes
  • snack – fruit
  • lunch – leftovers or we’ll eat out
  • dinner – homemade pizza

Sunday:

  • breakfast – eggs, toast, fruit
  • lunch – sandwiches/leftovers
  • dinner – beef stew (double batch to freeze)
