Cold Kicking Garlic Herb Spread

Although I’ve tried my best to remain healthy and boost my immune system, we had a cold virus hit our house last week. And with the conference coming up….I was NOT getting sick. So I kept up with my regular boosters I turn to, I made some homemade chicken broth for soup and started sinus cleansing two times a day. And then I kicked it up a notch and started eating some yummy antiviral foods.  My two favorite being coconut oil (contains lauric acid which has been shown to be a powerful antiviral fatty acid) and garlic (which needs to be consumed raw).

Both of them though are not my favorite things to eat plain, or raw in the case of garlic. Believe me though, I tried. I tried a spoonful of coconut oil, but I about gagged. I tried swallowing cut up raw garlic and it made my stomach upset.

And then my brilliance set in. (hey – no laughing!)

Also, a word of caution. You will smell after eating so much garlic! I made this about 4 times in a few days and most of it was eaten by me. Good thing I know  how good butter actually is for you too! And I still haven’t come down with a cold even though I had all the symptoms of one starting.

Cold Kicking Garlic Herb Spread

Ingredients
  • 3 Tbsp softened butter
  • 3 Tbsp softened/melted coconut oil
  • ½ tsp dried onion
  • ½ tsp basil
  • ½ tsp oregano
  • 2+ cloves of garlic (let sit for 15-20 minutes for the most medicinal boost)

Method of Preparation
  1. Mix all ingredients together and slather over bread, toast, baked potato, rice, etc.

Notes
One tip on the garlic, use one of those microplane zesters to really get it to an almost smooth consistency. And add in as much as you can! Raw garlic is supposed to be a great antiviral. I put 4 or 5 good sized cloves in mine and could have done more if it wasn’t for my 3 year old eating it as well.

  1. LOVE THIS!!! Those are like all of my favorite ingrediants! I love to eat raw garlic sliced VERY thinly with a bite of beef…it is not for the faint of heart as it is a bit “spicy”, but I love it! (I’m italian…i eat way too much garlic!)

  3. Sounds delicious! I have found raw garlic really helpful for preventing a little nose-and-throat thing from turning into a major sinus or lung infection. I usually add it to spaghetti sauce and mix it on my plate.

  4. I love to make a homemade viniagrette with fresh crushed garlic, and put coconut oil in smoothies, along with homemade yogurt. :) Makes me feel super good! Extra fermented foods too. :)

  6. this is actually something we have been making for a long time. In Belgium it is a regular spread/sauce for steak, barbecue and spareribs. You just made me hungry

  8. We made this tonight . . . LOVE IT! Thanks so much for sharing!!

    As I was copying it down into my reciepe book though, I noticed for the VCO you have “Tsp.” Since it was capitalized, I used 3 tablespoons, which worked out great for us. Regardless, of whether it should be “tsp” or “Tbsp,” I just thought you might wanna know about this typo.

  9. FYI: this is not showing up on the recipe page under any of the headings. I came looking for it b/c I remembered reading this when you posted it and my 3 yo cae downd with croup lat night. I searched coconutoil and garlic and it came up. Just thought you would like to know ;)
